Grape varieties Saperavi
Terroir Half of the grapes come from vineyards near the village of Kondoli and the other half from vineyards in the Napareuli appellation. The climate here is temperate with warm summers and relatively mild winters. The soil composition is very varied, from loam to river deposits and limestone.
Harvest method Handpicked.
Yield per hectare 11 tons per hectare.
Vinification The Saperavi grapes were picked by hand in the second half of September. After gentle deferment without pressing or crushing, the grapes were transferred to Qvevri for fermentation. The process takes about 3 weeks, followed by the malolactic fermentation. Later, the Qvevris are refilled, sealed and stored for a 6-month maceration with the skins. In the spring, the clarified wine is aged for several months in stainless steel tanks, followed by bottling.
Impression Deep red, with purple reflections. Medium to full body. Fresh, ripe red fruit and some mint on the nose. Soft and juicy at the start. Lots of red and black fruits. In the aftertaste sweet spices come through and ripe tannins.
