Domaine d'Escausses is the winery of the Balaran family from Gaillac in the French Tarn region. In this relatively unknown region in the French Sud-Ouest, not far from the historic towns of Albi and Toulouse, Jean-Marc Balaran works with different indigenous grape varieties and makes the wines according to the tradition of the Tarn. His wines are the reference for other winemakers in the region. Jean-Marc has since been elected mayor of the village.

Vinification | Soft pressing of the whole grapes, shelterd from the air. Selection of juices. Pellicular maceration before pressing on half of the Sauvignon. Fermentation in oak barrels from the Allier forests, 1/3 new. Bâtonnage of the lees for 9 months. Bottling under inert gas after 15 to 18 months of ageing. |
Impression | Straw yellow. Combines the wood aging with lively acidity. Banana, peach and vanilla in the scent. Fresh-ripe taste of white plums, yellow apple and butterscotch. Lots of length. Intriguing wine. |
